what are microgreens?

delicious baby plants

Microgreens are like baby plants; amazing little veggies harvested for maximum flavor, tenderness, and nutrition. Most microgreens are between 5-7cm tall when they’re harvested.

While they may be small, microgreens are packed with a high concentration of nutrients and some varieties also offer an intense flavor.

We grow microgreens year round, and only take a few days to grow them from seed to ready to eat. In other words, we can grow them quicker and get them to your plate faster!

Microgreens require little to no prep; removing stems, peeling, and chopping are a thing of the past. Just grab a handful and add to salads, sandwiches, pasta, or smoothies for an easy and potent shot of vitamins and flavor.

why choose microgreens?

Great Taste
Above all, microgreens have an especially rich flavor – a delight for your taste buds.
Heart Health
As an added benefit, microgreens help reduce the risk of heart disease and high blood pressure.
Nutrition
Meanwhile certain varieties contain between 4 up to 40 times more vitamins or carotenoids than their fully grown counterparts!
Locally Grown
Our microgreens are grown locally in Capriasca, southern Ticino.
Fresh & Pesticide Free
We deliver organic, pesticide-free, and sustainably-grown produce.
Flexibility
Choose the delivery frequency that best fits your needs.

are they the same as sprouts?

Microgreens are not sprouts.

Sprouts are seeds that have been grown in the dark, and soaked in water long enough to germinate, and you eat the whole thing – roots and all, and they typically don’t have their first set of leaves. On the other hand, microgreens require lots of light and good air ventilation; just like when you grow any plant in or outdoors.

Moreover, microgreens have a lower risk of foodborne illness, and they also pack more nutrition than sprouts. Since microgreens are usually grown in the soil like their larger vegetable counterparts, they have a lower risk for carrying water-borne bacteria like E.Coli.

culinary inspiration

Let your creativity rise and have fun. Cooking with microgreens is fun and simple. With a variety of textures, colors and flavors, you can reinvent your favorite recipes by adding a selection of microgreens. Adding microgreens to your food is like adding an elixir of vitamins, enzymes and antioxidants for your body.

Salads
All microgreens excel when eaten raw. Skipping the stovetop not only keeps them fresh and crisp, it also preserves the delicate flavor profile you expect from each of these mini powerhouses. Add to that the fact that any cooking method automatically zaps some of the nutrients and you’ve got quite a few reasons to pursue the path of raw food when it comes to microgreens.
Sandwiches and wraps
Another raw option is, of course, all things handheld. Tortilla, pita, gluten free, whatever your preference, microgreens are a fabulous way to add a punch of flavor and pack in the nutrition on any sandwich or wrap. Radish greens are particularly interesting for this because they also bring an element of spice to the table.
Cooking with microgreens
Some of these greens do very well when they are cooked. While some need to be tossed in at the very last second, others like peas and radish can stand up to a little heat. Microgreens can be a perfect addition to stir fry dishes, or paired with meats.
Juices/Smoothies
It can be argued that any microgreen would work for juicing or smoothies. Adding microgreens to a mixture of other things helps to give a seriously dense nutrient boost. Any smoothie or juice recipe can happily handle a dose of a wide variety of microgreens.
Baking
There are even a few ways you can bake with microgreens - seriously! Why not substitute the spinach in your quiche with sunflower microgreens? They’ll add a layer of flavor that spinach just can’t achieve and they will look absolutely beautiful, too. Or, if you’re feeling rather brave, include a little handful of radish to a summer berry pie. That hint of spice will offset the sweetness of the berries in an unusual way.

there’s no wrong way to eat microgreens

our growing process

1
Step 1:
We start from seeds.
Organic, non-GMO seeds
sourced from Europe.
2
Step 2:
We plant the seeds,
and water them daily.
They sprout after 3-4 days.*
3
Step 3:
We place the newly
sprouted microgreens under
light for another 3-4 days.*
4
Step 4:
We harvest as soon as
the first true leaves appear.
They are about 5-7cm tall.

* Depends on the species of microgreens. Some develop as soon as 6-8 days, while others can take up to 21 days.
